Yeast is a single-celled microorganism and is the “engine” of brewing, as well as of the baking and production of all alcoholic beverages.
The “second generation” IYEAST® Selected Yeast line was born from the technical-scientific collaboration between Lafood® Group and Professor Zironi of the University of Udine. The experimentation was based on the multiplication of the different yeast strains on a complex multiplication substrate.
The particular substrate contains all the “scientifically necessary” growth factors, Vitamin B1, Vitamin B2, Peptides, oligopeptides, sterols, ergosterols and essential amino acids, which allow the Selected Yeast an optimal cell multiplication, the regular development and the accumulation of substances backup.
The iYeast® yeasts guarantee the technician the use of starter cultures with a high number of active cells, with excellent alcoholic power and capable of developing under limit conditions of temperature and sugar concentration of the must.
